Letter from the Executive Director |
Dear WASCA members and cheese lovers, Summer has been burning along, and along with it some parts of our state’s wildlands. As this annual season of smoke has become the norm in our state and throughout the West, I hope you are all staying safe wherever you are—and hopefully enjoying the brief, cooling respite of some rain. This edition of the newsletter comes with much to celebrate, despite the realities of the natural world that are so keen for those of us who work in or adjacent to agriculture. I returned last month from the American Cheese Society’s annual conference, which was held July 11-13 in Buffalo, New York. While I was rejuvenated from attending sessions on topics ranging from lessons American cheesemakers can learn from Europe’s PDO system to succession planning for cheesemakers, I was most excited by another year of great wins for Washington cheesemakers in the ACS Judging & Competition—for which I was honored to have been invited to serve as a judge for the first time this year. It was exciting to see the winners of the blind contest revealed on July 11. |

Since the two cheeses that placed first and second in the Best of Show contest are both Canadian, Beecher’s gets to call their Flagship Reserve the best cheese in the US – which has quite a nice ring to it.
While awards are wonderful, there’s lots of hard work going on in creameries across the state through the thick of farmer’s market season, which serves the public week after week, rain, shine or smoke. I hope our Cheese Trail Passport Program, along with the forthcoming revision to our Washington Cheese Map, will continue driving interested customers to cheesemakers across the state, wherever they sell their cheeses. As interest in WASCA Business Member Genuine Skagit Valley’s hyper-local cookbook and the recent spate of media interest in our Cheese Trail Passport program—as listed below under our beefier-than-usual “Members in the News” section below—show, folks are still interested in local food and getting to know where it comes from.
That’s especially important for our cheesemakers, but also for WASCA as we look toward 2025 with the news that we will not be receiving a new grant from the USDA this year. Despite the financial challenge that poses for our organization as we seek to fund our programming, we have the opportunity to continue building relationships with folks in our community around a shared love of cheese in order to support our talented and wonderful cheesemakers for the long term. I look forward to seeing where that journey takes us.

Washington Cheese Trail Passport Program Update
In celebration of the second annual Washington Cheese Month, this spring we launched our Washington Cheese Trail Passport Program. Folks can sign up through the Find Washington Cheese button on the WASCA website. The passport is a digital check-in program that works as a website users can bookmark on their phones (not another app to download!). Passport holders check in when shopping with creameries and cheese-related businesses to earn points toward a raffle prize, which will be awarded after the first year’s program ends in March 2025. We currently have two cheesy prizes listed, but we’d like to offer some more. If you or your company would like to donate a prize for the raffle, please reach out to Courtney at WashingtonCheese@gmail.com.

Cheesemaker Chats & Technical Roundtable Our Cheesemaker Chats series returns in September! These members-only virtual education events are casual opportunities to dig into a topic with a guest speaker and plenty of time for questions. The next three Cheesemaker Chats will be: Tuesday, September 24, 5:00 p.m.: Debbie Fredericks of AgrAbility on mental health resources for cheesemakers and farmers Tuesday, December 10, 5:00 p.m.: Emilia D’Albero of Formaticum on cheese paper and wrap solutions for cheese, from a cheesemonger’s perspective Tuesday, February 18, 5:00 p.m.: Andy Hatch of Uplands Cheese in Wisconsin on scaling up as a medium-sized, artisanal creamery Cheesemaker Chats are open to current WASCA members of all levels—not just licensed cheesemaker members. In addition to the Cheesemaker Chats, we are partnering with the Oregon Cheese Guild to offer a biannual Technical Roundtable that will give member cheesemakers the opportunity to chat through and troubleshoot issues affecting them. The first Technical Roundtable will be held virtually on Thursday, October 10, at 9:00 a.m. An email will go out to WASCA members a few weeks before the roundtable to see what topics folks are interested in, so that we can try to invite an expert to join the call. |

Cheesemonger Resources Webpage In addition to our long-standing Resources page geared toward cheesemakers, we recently created a Cheesemonger Resources page to help engage folks selling Washington cheeses in their stores. This new page on the WASCA website includes a list of resources and trainings to help cheesemongers up their game, as well as an archive of Washington Cheeses by creamery. In the future, we hope to add tasting notes for common local cheeses. |

Food Safety Conference Coming to Chelan, Sept. 12-13 The Washington Association for Food Protection will hold its annual conference in Chelan, September 12-13. The annual conference provides a forum for sharing the latest technical and scientific information, timely coverage of the latest topics of concern, and an opportunity to meet and exchange ideas with fellow food safety professionals. Conference attendees come from fields diverse as quality assurance, processing, regulatory, consulting, risk management, research and development, microbial research, plant management, technical services, material and equipment experts, allied suppliers, food growers, academia, and experts on the latest methods and technologies. DSANA Announces Chicago Conference, Nov. 7-9 The Dairy Sheep Association of North America’s annual symposium will be in-person this year with sessions held at the Hyatt O’Hare in Chicago on Thursday and Friday, November 7-8. PCC-DBII Grant Applications Due Sept. 30 The Pacific Coast Coalition Dairy Business Innovation Initiative released a new call for funding applications with the deadline of September 30. The program expects to offer 6-10 grant awards to dairy processors in Arizona, California, Nevada, New Mexico, Oregon, and Washington. Washington cheesemakers have received several grants since the PCC-DBII formed and began offering grants two years ago. To learn more or to apply, visit the PCC-DBII website. |

Western SARE Grant Program Accepting Applications The Western Sustainable Agriculture Research and Education Program is still accepting applications for 2024. Applications are due October 23, and eligible applicants include farmstead producers and farmers engaging in animal agriculture who are pursuing an applicable project on their land. August 29: California Meet the Cheesemakers Event The California Artisan Cheese Guild’s virtual Meet the Cheesemakers series continues on Thursday, August 29, with Alex Borgo and Rebecca Buhler of Fiscalini Cheese (Modesto, CA). The series’ goal is to create an opportunity for cheese enthusiasts and industry members to meet the makers that make our cheese industry so special. World Cheese Awards Now Accepting Entries Cheesemakers wishing to submit cheeses to the World Cheese Awards competition have until September 15 to register their entries.
