Vat Pasteurizer Workshop / Ongoing

The course consists entirely of online self-paced content and is for individuals who have responsibility for operating the vat pasteurizer or for those thinking of starting a new small-scale business. The key components of vat pasteurization include the importance of pasteurization, pasteurizer construction, thermometer requirements, chart recorders, raw milk quality, and pasteurizer cleaning and maintenance. This course has rolling admission. You may begin the course once your registration and payment are confirmed. Participants have 4 weeks to complete the course, either at home or at their facility. Registrations are accepted at any time.

FSMA Traceability Workshop with Marc Bates / May 2, 2024, 9:00 a.m. – 12:00 p.m.

We are pleased to partner with Marc Bates of Bates Consulting LLC to offer a free workshop on the FSMA Traceability requirements that go into effect in 2026. Marc will host a virtual training on Thursday, May 2 from 9:00 a.m. to 12:00 p.m. that will summarize the requirements of the rule and explore technology-based solutions to help cheesemakers get up to speed before the requirements take effect.

The three-hour training will include an exploration by Marc of the traceability requirements that he’s combed through and how they are expected to be met, a panel discussion featuring cheesemakers and an app creator talking about some technology-based solutions already in use, and a group discussion with Q&A.

An invitation to register for the training has been sent to all current WASCA members.

Pasteurization Workshop / July 23-25, 2024

This 2-day class on pasteurization covers vat, basic High Temperature Short Time (HTST) systems, and on the 3rd day Higher Heat Shorter Time (HHST) systems. Additional discussions on magnetic flow timed systems and systems with auxiliary equipment are included. Hands-on activities are conducted in the WSU Creamery Facilities. Course is suggested for plant operators, maintenance personnel, quality personnel, management and suppliers to the industry.
