Beecher's Handmade Cheese
Beecher’s Handmade Cheese starts with fresh pure local milk. We work with talented cheesemakers who apply traditional cheesemaking methods. We don’t use anything artificial ever. We feature foods that are free of artificial preservatives flavor enhancers sweeteners colors and hydrogenated oils (trans fats). We are zealous in our search for and creation of full-flavored foods. And we get great satisfaction out of sharing our new finds and creations with others. We are committed to educating our customers about the benefits of pure wholesome food.
| A Simple Mission
We love our friends at Beecher’s Handmade Cheese, a well-respected company based out of Seattle’s Pike Place Market. Their mission is as follows:
“Beecher’s handmade cheese makes food only with ingredients we trust, are proud of, and would eat ourselves. It’s just authentic and original food, full of flavor.”

| The Flagship is Flagship
Beecher’s Flagship cheddar-style cheese is a staple in crisper drawers from coast to coast. This 15-month-aged cheese boasts notes of sweet and salty butter, a tinge of fruitiness, and tangy acidity. The open, slightly crumbly paste is riddled with crystallization, which makes for a well-rounded, complex bite. We love it matched up with a full-bodied, Washington Cabernet that expresses lush fruit and excellent structure. For other pairing recommendations, hit us up–we’re here for you!

| Good When It's Hot or Cold
Beecher’s has some exquisite recipes on their website, like this Apple Cider and Cheese Fondue which is an absolute must-try during autumn. It includes their Flagship cheese, Just Jack, and Dutch Hollow Dulcet, together creating a magical combo. Pop over to their website and get this recipe for your next gathering!

| A Local Legend
Beecher’s Handmade Cheese is posted up in the heart of Seattle’s iconic Pike Place Market. Their shop is where folks live out their cheese dreams (their Mac and Cheese is to die for) and can observe the cheesemakers hard at work.
Besides showcasing their own delicious handiwork, Beecher’s also sells a fantastic selection of local cheeses. Having an array of our state’s best fromage all in one place in our downtown gathering locale is a tremendous win for WASCA.
Beecher’s has always been supportive of Washington artisan cheesemakers, and we couldn’t be more grateful.

| A Real Curd Nerd
A special shout-out is deserved to Brian Gilbert, CCP, CCSE! Brian is a head cheesemonger at Beecher’s Seattle. He has been blazing trails for this beloved creamery for a very long time, and who better to have as a face for a cheese company? Brian is wildly enthusiastic about Beecher’s (and cheese in general), is incredibly knowledgeable, and he is just one of the nicest people you’ll ever meet. Brian, we are grateful for all that you do for our industry.

| Variety's the Name of the Game
Beecher’s Handmade Cheese produces a variety of delicious cheddars and Cheddar-style cheeses. As with all of their cheeses, they use the best ingredients and never any preservatives. New Woman is popular among turophiles, as it boasts warm, savory notes thanks to its generous freckling of Jamaican Jerk Spices. This is a great fall cheese that can be melted or eaten as-is. Just look at those herbaceous crumbles of well-made cheddar!

| A Winning Streak
Beecher’s Handmade Cheese cleaned house at The American Cheese Society’s last in-person competition (before the COVID-19 pandemic) in 2019. Look at all of those winners! Well done, Beecher’s, we are proud of you!
